Last year at the Starfleet Klingon banquet we offered Rokeg blood pie as a desert, which was in reality raspberry pie.
Now I am planning the menu for the second banquet.  In Keith DeCandido'd new book, "A burning House" he describes the Klingons eating candied racht.  Now I beleive racht is something like gagh although unusually for Klingons, in this case they were dead and candied.  If I could think of a substitute, it would make a fantastic desert for the banquet.
Has anyone any ideas how I can turn this into the sort of desert a restaurant might serve?

According to Memory Alpha, racht is a "larger version of qagh". How about candied dates?  They're tubular like a (cut-up?) worm, and very sweet.

I think Klingons eat very strong flavored foods, so I would suggest a selection of candied items, among them Dates, Orange Peel and Ginger. Although these alone are more like finger food and less like a sit down desert. I suppose they could be converted into one with the addition of some ice cream or some sort of cake, with the candied racht over the top.

Also I do remember in the old "Official Star Trek CookBook" which came out just after TOS, it featured Gingerbread as a Klingon Desert. A few years ago while on vacation and traveling through the mid-atlantic states, I had a fine desert made of Gingerbread, with a strong Lemon topping, much like the filling of a lemon pie. I have often thought of different variations of this, perhaps using Blood Oranges for a darker color and sweeter taste, and of course as I always do, increasing the ginger in the gingerbread for a much stronger flavored cake.
